Cups vs Grams: Why Bakers Weigh Ingredients
A single cup of all-purpose flour can weigh anywhere from 120 to 150 grams depending only on how you fill the cup. That spread is why the same recipe can turn out dry one day and perfect the next, and it is the whole reason serious bakers reach for a scale. This guide explains where the imprecision comes from, how we pin every number on this site, and how to measure well whichever tool you use.
The short version: volume is fine for liquids and small amounts, but for flour and other packable dry goods a scale in grams removes the guesswork. Our converter gives you both.
Why a cup of flour is not a fixed weight
A cup measures volume, the space an ingredient takes up. Flour is compressible and full of air, so the space it fills depends entirely on how it got into the cup. Dip the cup straight into the bag and pack it down and you can trap 150 grams or more. Spoon the flour in loosely and level the top with a knife and you get closer to 120 grams. Nothing about the recipe changed, yet you are now up to 25 percent off. Bread comes out tough, cakes come out dense, and the recipe gets the blame.

Weight does not have this problem. One hundred and twenty grams of flour is 120 grams however it lands on the scale. That is why every professional formula and most modern recipe developers give weights: they are describing the ingredient itself, not the shape of your measuring cup.
How we source the numbers on this site
Converters disagree because they quietly assume different fill methods and different cup sizes. We made two deliberate choices and we state them everywhere.
Dry ingredients follow King Arthur Baking's weight chart, using their spooned-and-leveled method. That is why our all-purpose flour is 120 grams per cup rather than the 125 grams many charts print. Where reputable charts land somewhere else, we store and show the range instead of hiding it, so the flour, sugar, and other dry pages tell you both our figure and the typical spread.
Liquids use measured density, not a rounded label. King Arthur rounds most liquids to 8 fluid ounces, or 227 grams, per cup. Physics disagrees: a US customary cup is 236.588 ml, so a cup of water actually weighs about 236.6 grams, not 227. We compute liquids from real density times the true cup volume, so water reads 237 grams and milk reads 244 grams (density 1.03). When a common chart rounds differently, we note that in the range.
US, metric, and UK cups are not the same cup
Before you even fill it, a "cup" means different volumes in different countries. A recipe written in Sydney and a recipe written in Boston use cups that differ by more than a tablespoon. Our converter lets you pick the standard so the math is honest.

The tablespoon shifts too. Under the US cup a tablespoon is 14.79 ml, and there are 16 tablespoons in a cup. Australia standardized its tablespoon at 20 ml, so an Australian cup holds only about 12.5 of its own larger tablespoons. Measuring technique that actually helps
- Spoon and level dry goods. Stir the flour to loosen it, spoon it lightly into the cup, and sweep the top flat with the back of a knife. Do not tap or pack.
- Pack brown sugar. Brown sugar is the exception: press it firmly into the cup so it holds the cup's shape when tipped out. That packed figure is what recipes expect, about 213 grams per cup.
- Read liquids at eye level. Use a clear liquid measure on the counter and check the meniscus at eye height, not from above.
- A scale beats cups. For anything you bake, weighing in grams is faster, uses fewer dishes, and removes the fill-method error entirely. Zero the scale between ingredients and pour straight into the bowl.
When volume is perfectly fine
Cups are not the enemy. For liquids like water, milk, and oil, volume and weight track closely and a measuring cup is quick and accurate enough. For small amounts, a level teaspoon of baking powder or salt is easier to eyeball than to weigh at a fraction of a gram.
